Brine, salt water, particularly a highly concentrated water solution of common salt (sodium chloride). Natural brines occur underground, in salt lakes, or as seawater and are commercially important sources of common salt and other salts, such as chlorides and sulfates of magnesium and potassium. A brine is essentially just salted water, but for such a simple solution it can do many things. Brines are used to salt cheeses such as feta and halloumi, not only for flavour, but to inhibit the growth of a variety of moulds, to preserve it and in some cases to draw out moisture, helping it to develop a rind.
Brining was originally used for food preservation in the pre-refrigeration era. However, there are two solid reasons why you should brine your meat in this century: flavor and texture. Brining infuses the meat with savory, finger-lickin' flavors, all while tenderizing it to butter-soft texture.
Brine is water mixed with salt or an acid, such as vinegar. Fermented brine contains good bacteria that may improve health, but only some brines go through the fermentation process. Due to the methods of their formation and lack of mixing, brine pools are anoxic and deadly to most organisms. When an organism enters a brine pool, they attempt to "breathe" the environment and experience cerebral hypoxia due to the lack of oxygen and toxic shock from the hyper-salinity. Marinate or brine meat for flavor, not as an attempt to kill bacteria. Marinating or brining meat does not reduce the number of pathogens contaminating the meat. Adding acid to such a marinade does not kill bacteria. Test the temperature by inserting a meat thermometer into the thickest part of the meat.

In most cases, we add sugar to the brine. Sugar has little if any effect on the texture of the meat, but it does add flavor and promotes better browning of the skin. We usually list both kosher and regular table salt in recipes that call for brining.
Brining too long can result in meat that tastes overly salty and has a spongy texture. The traditional brine is made from a ratio of 1 cup of salt to 1 gallon of water. This based on table salt. One cup of table salt weighs in at 10 ounces. Brining helps bring the benefits of salt to every bite, not just the surface. On the other hand -- and there is always another hand -- too much salt can make food unpleasant. The trick is to not make the brine too salty and not to leave the meat in too long. Overbrining is just as bad as overcooking.
Tip: There is no need to boil all the brine liquid because you can fully dissolve the salt and sugar and extract the flavor out of any seasonings in 1½ cups of liquid. Leave the protein in the brine for about 1 hour per pound. Store in the refrigerator, as the brine must be kept cold at all times during the process.
