Combine 2 ½ tablespoons of salt, 1 tablespoon of dried oregano, 1 tablespoon of paprika, 1 tablespoon of cayenne pepper, 1 tablespoon of ground black pepper, ½ tablespoon each of onion powder and garlic powder in a bowl and mix thoroughly. As you may have suspected, cayenne pepper is the primary heat source for Cajun spices. Cayenne ranks between 30,000 and 50,000 on the Scoville scale, so it's a medium-hot chili. Creole seasoning is great for smoking and barbecuing meats and for roasting vegetables. On its own, does it provide the same or even similar flavor profile as jerk seasoning? Fill a large stockpot halfway with water and bring to a boil. Add the lemon halves, follow by the shrimp, crawfish, Manila clams and corns. Grind mixture in mortar and pestle or coffee grinder.
